Ingredients:
- Onion finely diced 50g
- Olive oil 10ml
- Bay leaf 1
- Seasoning To taste
- Long grain rice 1 cup
- Veg/chicken stock 1 1/2 cup
- Cold butter 1 tblsp
- Sweat onions in olive oil.Add rice,bay leaf and stir through to warm.
- Add boiling hot stock and cover with a tight fitting lid.
- Place in an oven @ 180°C for 20 minutes.
- Remove from the oven and fork through butter with seasoning.
