Court Bouillon

Ingredients:

  • Onion                       1/6
  • Leeks                       1/6
  • Carrots                     1/4
  • Celery                      1/4 stick
  • Dill                           2 sprigs
  • Peppercorns white   4
  • Bay leaf                   1
  • Parsley stalk            4
  • Water                     1 Lt
  • Seasoning               Pinch
Method:

  1. Place all ingredients in a pan or poaching dish and bring to boil.Skim
  2. Turn down to a poaching temperature
