Mayonnaise

Ingredients:

  • Egg yolks                          3
  • Mustard Dijon                   1 tblsp
  • Oil                                     500ml
  • Vinegar white wine             20ml
  • Seasoning                          to taste
Method:

  1. Add egg yolks,vinegar,mustard into a stainless steel bowl.
  2. Add the oil in a thin stream whisking constantly.
  3. Adjust seasoning and consistency.
NB: Vinegars,mustards and oils can be varied for different flavors.
