Pan Fried Calves Liver


Ingredients:
  • Liver                                    120g
  • Shallots                                40g
  • Lardons bacon                     30g
  • Red wine                             60ml
  • Demi glaze                           80ml
  • Flour for dusting
  • Seasoning
Method:
  1. Season and lightly flour liver.
  2. Pan fry on both sides till light golden brown and remove from pan.
  3. Sauté shallots and bacon and deglaze with red wine.
  4. Add demi glaze and reduce to a coating consistency.
  5. Plate liver and coat with sauce and garnish.
